Top o' the evening to ya! As promised in my last post, today I'm going to share with you the cookies that accompanied my St. Patrick's Day hat cookies. These rainbow pot of gold cookies will add some considerable bling to any St. Paddy's Day dish. It all begins with a common cookie cutter you might already have.

This ice cream cone cookie cutter was an exclusive find at Joann Fabrics. I've seen it in stores the last two years, so chances are it will be available this year as well if you don't currently own it. For these rainbow pot of gold cookies we will be using this cookie cutter upside down.

Decorating Process

Step 1

Begin by drawing the guide lines of the cone with a food marker. Divide the cone into six sections for the colors of the rainbow. Then fill every other section with colored royal icing. (Remember Roy G. Biv?) Let the icing set before moving on to the next step.

Step 2

After the icing had time to set, fill the remaining rainbow colors in remaining sections. Also, fill the bottom of the cauldron with black royal icing. Leave this icing to set for a few minutes.

Once the icing had time to crust over, add a black ring in the middle for the top of the cauldron detail. Let the cookie dry completely (2 to 4 hours) before moving on to the next step.

Step 3

After the cookie had time to dry completely, fill the remaining center hole with yellow or gold flood icing. I like to do three cookies at a time before moving on to the next step.

NOTE: In the picture, you can see that I added cauldron handles out of sequence. You can either add them along in Step 2 or in the very last Step 5, as described below. My bad!

Step 4

Place the cookies on a sheet of wax paper, then sprinkle gold or yellow sanding sugar over the yellow flood icing while it is still wet. Shake off the excess and set the cookie aside to dry. Use the wax paper to pour the excess sanding sugar back into the container.

Step 5

Lastly, add the final details. With medium consistency black icing, add a cauldron handle off to the left side. On the right side, add shine accents with a food-only paint brush and white Americolor food gel.
